I've already got a larder fridge with tube heater and STC controller.

conicals look great. I would be too tempted to be lifting the lid off all the time.
I only ever loosely fit my lid on my fermenting bucket, never had any probs, but I am sure I will be measuring my fridge up, just to see if one of those bad boys will fit.

Mine arrived yesterday. First impressions were how small it looked, but it fits perfectly into my fridge. The stc-100 probe fits into the thermowell perfectly too. I'll set it up properly and get my brew in it tomorrow

It's different to the reviews on the web. The thermowell is now removable and the ball valves are welded to the tri clamp fitting instead of having to screw them on.

I'm very pleased I got it

You've already dropped that out a couple of days before ;)

What I actually do is transfer to the conical pretty quickly and in the summer the temperature of the wort can be about 25-30C in the FV . . . I then turn the chiller on, and chill to 10C. This cause precipitation of a huge amount of cold break, plus all the hot break that got transferred. Then I drop about 1-2 Litres of break and wort, before warming the wort back up to pitching temp and finally pitching the yeast.

That is one of the great things about these conicals, you don't have to pitch as soon as the wort comes out of the kettle, you can do it 12 or 24 hours later as long as you take extra care with sanitising everything . . . and with a stainless conical that is really easy to do.

+1. I too dump the crud once it has settled (though sadly my chiller is fairly wussy, so I try to transfer as close to pitching temperature as possible).

I also typically discard the first/bottom layer of yeast when later harvesting - I read that this removes less healthy cells (that died and sank prematurely) from the harvest - but I don't actually know if thats true.

Even if you're not harvesting the yeast I would advise dumping them at about the time people who use secondary fermenters would transfer. Aside from avoiding any issues from autolysis, if left for a long time flocculant yeast strains can set quite firmly and make a plug at the bottom. At least they can in mine, which only has a 1" dump valve.

So how many days into fermentation would people suggest dumping the yeast ? My plan is to dump it into a litre kilner jar and store in the fridge until the next brew is ready. Then make a real wort starter and repitch.

don't go by days, go by gravity measurements. my current beer is one point away from the planned FG, so i've been dumping yeast today, and i'll do it probably daily until it's time to rack off.
