force carbonating with nitrogen mixed gas

popped down to the home brew shop today to pick up some hops and yeast. i also bought a new widget world cylinder, but failed to notice the fact she gave me the 70% nitrogen/30% CO2 version by mistake.

so my question is: having never used beer gas, only straight co2, can you force carbonate wih this stuff? :huh:

Yes, but you will need a higher pressure to get it into solution as nitrogen is less soluble than CO2. It produces smaller bubbles when it comes out of solution, hence a tighter, creamier head (such as with creamflow beers).
