I read a post somewhere else where someone used such a flange to secure an immersion element to a plastic bucket and couldn't get it done up tight enough to be a watertight seal.

I did the flange up by hand, more than tight enough. The plastic is quite flexible and it came with a gasket. if your struggling you could make a gasket from rubber or something.

It's just from the local plumbing suppliers.
Part number 6912 Immersion heater ring/flange

I brew wine for the missus in the water bottles. I use the water for the wine then put the fermenting wine in them,

Cheers Orfy - I bought a cheap 3kW immersion element from Ebay a few months ago so might find a use for it in my HLT plastic bucket! (currently got a 2.4kW kettle element in there)

Don't all immersion heaters have thermostat cut-outs to stop boiling? How do you disable that or don't you have to?

I chose one on Ebay which didn't have a thermostat or cutout 8)

Must be an old one, pre-cutout regulations.

Having looked on the web, can you just join the wires leading to the thermostat? Are thermostats still replaceable in new immersion heaters?

The stats are still replaceable, don't know how to bypass the cutout - probably very easy.

I would never advise people or tell people how to bypass safety systems but lets just say that 1 little screwdriver is all that's needed.
Never do anything if you are not competent and know what you are doing. when it comes to electricity and water.
I use my bucket for heating sparge water so leave the thermostat to 77c. Although for some reason the thermostat is vulnerable to turning up it's toes so I turn it on, monitor and turn of when the water hits 77c. But yes it will boil nicely. You can get SS heaters, that's what i'd use if I was boiling wort. Plus I'd use a tougher plastic as the one I use is just a standard fermenter pail.

Here's my keg set up.

This is the first time I'm going to use it on a Hob Goblin Clone.
Any draw back you can see or any tips for using it?

I know cornies are rated at 100psi but what is the blow off valve set at?

The "Initiated" would realise it's a distiller for my brew water.

5 gallon of nasty anything in.
Turn it on. Keep it at a temperature <100c All the nasties present comes out, to be thrown away.
Then turn it up to 100c and all the distilled water comes out.
All the gunk is left inside.
