So... turns out that L1 is low speed and L2 is high speed. Which kinda makes sense actually when you think about it...
The blank isn't removable.
So powerful. I think it's going to do the job nicely

Are you going to hard wire high or make it switchable. Just wondered how noisy it might be.

Plan was to wire on high only. However, after seeing how powerful it is, I'd like to switch between the two. Reckon i'd only need high for the boil. Sparging and hop stand should be fine with low.
I've had a quick look at 2 speed fan switches and feeeeeck! Pretty pricey!

if you dont need on off a standard 2 way light switch will do,if you also want off and on but don't mind 2 switches

live in to switch 1common ,terminal 1 or 2 on switch 1 linked to common of switch 2,terminal 1 of switch 2 to the slow speed on fan ,switch 2 terminal 2 to high speed on fan.neutral goes straight to fan

You need two switches.
Switch One to do the on-off. Live in. Live out. (leaving one terminal unused).
The 'out' from that is the 'in' to switch 2. (you need to add this bit of wire as a bridge)
Switch 2 live in (your bit of wire) connect to L1 or L2.
Bingo.

Cheers! Works a treat. I've re jigged the wires so that left switch is on/off. 'On' function on right switch for high fan. 'Off' function for low. Just made sense in my head that way.
Getting there slowly. Next jobs:
Frame for the vessels
Hot water supply, sink and drainage
R.O system installation
More OSB wall panels
Spot lights
More things that I've forgotten I'm sure!
This is going to take a while...
