Just read the whole thread - excellent stuff.

I'm in the processing of designing/building a PID or brew/sous vide/cheese/etc., and have a question. Of what importance is it to have a second switch to isolate the PID from giving output? I understand why you would do this, but I need to gauge on a scale of, say, 1-10, how crucial it is.

I would rate the isolation switch requirement as a "nice to have", probably a 6 if 1 is low and 10 is definitely must have. I put such a switch in my controller box and it's useful but obviously it's potentially another switch which you then have to remember to turn on etc etc.
