Kettle hop stopper for bottom drain

Hi guys,

I am on the home straight with the build but am struggling with what design to choose for my kettles hop stopper. I haven't seen many options that would suit my application. It is a converted 100L stainless keg with a central 15mm bottom drain already made. The drain is simply a 15mm hole, as there is a 15mm x 1/2BSP elbow brazed to the underside.

What are my options? Any links to guides or even just discussions very welcome

I don't use pellets at present but would like the option to do so in future for the steep additions. I have the following bits lying around that could form part of it - a sheet of fine stainless mesh, two small discs (approx 15cm) of perforated stainless, various plumbing fittings in 15mm compression and solder. I can blag scraps of pipe in most sizes if needed.

Something removable for cleaning would be handy but it must preserve as far as possible the zero dead space benefits of a central bottom drain.

Please note that the base of the kettle is quite concave and has a star shape embossed into it so is not flat a bit like this:
