Here's how I did mine. I used a lugged power supply from Maplins. I cut the 12v coaxial plug off so I could wire it into the controller. The lugged AC power supply is pretty nigh on waterproof as it is contained in a sealed unit. AC adapter, controller and pump are mounted on a small block of marine ply. I always put the block on the floor with the AC lead going upwards to the mains socket. Never get any wort into the AC lines.

I use a pair of LM217, wired up inside a project box. they are powered by a 24V Dell laptop power supply. There are then 2.1mm connectors to output to the the pumps.
seems to work fine. the heat sinks get hot though.
