I'm in the process of building a new 2.5bbl brewery to replace my old 1/4bbl kit. So far I have only just started on the three vessels and have loads left to do.

The 680 litre HLT. All i have done o this so far is weld a 2 1/4 element socket and connections for a sight glass. It will have a 9kw element fitted and be insulated and wood clad.

The 530 litre mash tun. This has had a the top removed and a stainless, flat-bar cross welded into the bottom to support the false bottom. Again this will be insulated and wood clad and have a new lid fabricated for it.

The 680 litre brew kettle. This has also had the top removed. It has three 2 1/4 sockets welded in for three 6 kw elements. Yet again it will be insulated and wood clad.

All will need a lot of polishing too before being clad etc. Hope fully be up and running in a month or two!
If I had all the money I'd spent on brewing... I'd spend it on brewing!

Good to see your thriving, wonder how long before your not the smallest commercial brewery in Essex.

Hi Barnsley — I love your setup. How does it work with the steam sanitising of your fermenter? Do you just bung it over the top of the boiler?

Cheers, internal dia 500 height 625 shallow cone 125ltr brim full I could squeeze a wee bit more than 80ltr but four pins keeps me and my neighbours going. :D

Hi,
If you look at the first pic I posted the lid has got a ring of holes that sit under the SS mixing bowl for steam to escape,I then connect an extraction pipe for when i'm boiling, towards the end of the boil when I've thrown protafloc in I balance the fermenters on the bowl and wedge it slightly against the roof to add a bit of pressure to hold it tight so it holds virtually all the steam in.
After 5 mins I remove, screw lid on and seal hole to keep heat in then do the same with the other 2.

I may try that steam sanitising. Simple but brilliant. Economical too.

Never had a problem, done it this way for years, but you really need to get that steam inside to get it finger burning hot.
Don't think it would be as effective with a 5 gallon bucket, best bet is wine fermenters.

Thanks Barnsley. Very informative! I might give this is a go on my SS fermenter, when I've finally got the brewery up and running again.

Is it worth leaving the fermenter tap open to get a bit of through-flow?

Dunno? My fermenters haven't got taps on so cannot comment... Might be awkward handling a SS fermenter into position?? Nylon is easy so I'll be interested to see a few pics.
