All depends on head space, if you have a thermowell probe going through the lid only the main stem of the thermowell might be in contact with the ferment, whereas if your thermowell is situated lower down (below liquid level) everything is in contact. As long as everything is cleaned properly before use, it shouldn't be a problem eitherway. An externally mount temp probe would I agree negate any issue, although I am still a firm believer that you should be measuring the actual ferment inside rather than the stainless vessel itself.Belter wrote:The sanitation risk from thermowell or probe are identical
