ice bath temp

hi all, quick question.
ive just installed a stc-1000 controller in a maxi 110 chiller which at the moment is dispensing lager from a keg, but im not sure what i should set the hi/lo temps for the probe at.
the probe is place in the bath, near the agitator and recirc pump.
thx in advance.

these are my settings at present
temp set value -5
temp difference 1<2 degs
delay 10mins

The water in the ice bath in my Maxi, controlled by the Maxi thermostat, reads about 0°C to -2°C.

If you drop it to -5°C is there a chance the whole thing will freeze solid and the pump will drop dead?

What's the reason for not using the thermostat in the Maxi?

Ps How are you dispensing the lager? Is it going through the coil in the Maxi?

I suspected either thermostat or the controller was faulty as it would be ok for a few days then would not cool at all. Then would work but freeze up. So installed stc for the flexibility and visual reading of temps.
I’ve now raised my target temp to -1 as indeed it started to try and freeze the agitated water. I’ll leave it again for a hour or so and check again for a good ice bank.
Yes the lager goes though the inner coil
