Soda ash/citric

I've worked in wineries that used caustic soda - which is nasty stuff and not something I was ever comfortable working with.

However, in the US, wineries use solutions of soda ash followed by citric for sanitising. The idea is that the rapid change from high to low pH does for the nasties.

I just wonder what others think about this?
