Now that I have almost completed my new brewery could some one please advise me on what would be best to remove oil and cutting grease used in build, and to clean new SS pots?

Degreaser sounds too obvious. Need to wash thoroughly afterwards I would have thought

New brewery now striped down and sitting on SS table in garage, I must be honest with you I have tryed to make 2, 50l brews and have had to dumped both(never had to dump a brew in my life), first I stopped half way through the boil when I noticed large amounts of a grey rubber like substance on the surface of the wort, this was also present on the surface of the grain, wort also tasted very off and bitter, at the time I though it was coming from the false bottom some type of cutting grease. After this disaster I cleaned and boiled everything again only to find same thing happened although not as much of the grey substance, but tasted very off and bitter. I have also used gysum 7g, for the first time in both brews as sugested by Murphys water report.

Get yourself some "No Nonsense" Degreaser form Screwfix. Apply it with an old paintbrush, leave it, rinse it off and repeat. Then wash inside and out with very hot water and ordinary washing up liquid. Rinse it really well.
When it is dry, have a sniff. If you can smell machine oil you haven't cleaned it well enough!
