I brewed a stout 70/20/10 with white labs 004 Irish ale yeast, a first for me with the normal Guiness clone, and it’s been conditioning in a corny keg for about two weeks now. I did a taste test and I was amazed how good it was and ready to drink... I normally wait six weeks for my beer to condition and clear up nicely. Is this normal for a stout with 004 yeast? Does it ferment and condition quickly?
I could certainly start on it now.

not used that strain myself, but i find that liquid yeasts in general (or perhaps second pitch dried strains) are good to go quickly if you've had a healthy ferment.
