Hi,
So i brewed 2 gallons of stout and added a full vial white labs yeast to it. (designed for 5 gallons)
Having taken a hydrometer reading it is still at c.1.030 - against a target of 1.019.
I'm in the process of testing the calibration of the Hydrometer but does this sound normal?
Is it possible that by using the full vial it is taking longer to ferment?
And if so would it be recommended to just use half in the future?

No, you won't have overpitched, but it ought to have been at FG by now.
Checking your hydrometer in tapwater should be enough to find if it might be out by much for measuring atowards the end of primary fermentation.
What yeast, original gravity and temperatures? Sounds as if it might need rousing and the temperature raised.

Without patience, life becomes difficult and the sooner it's finished, the better.

As Eric says, a full vial won't be the problem.
If you're expecting a target gravity of 1.019 that suggests a high original gravity, possibly 1.080 or just under. That's a lot for the yeast to cope with.
Recipe, yaest and fermentation temperature would be helpful. Rousing is definitely a good idea.

I have the wort inside a 12l Spiedel Fermenter inside a fridge controlled by an inkbird - Sensor in a glass of steriliser. Solar tube for heating - fridge for cooling.
Tested hydrometer in tapwater and it appears to be reading correctly.
Target OG: 1.075
Actual OG: 1.074
Target FG: 1.019
Yeast: WLP002
Temperature: 19.5c

Tape the Inbird Sensor to the fv with bubble wrap covering it. The vial of steriliser will have a different thermal mass to your full fv.

Indeed it will. which way and with what effect is the unknown.
WLP002 is a well respected yeast, particularly its ability to flocculate. I would certainly give it a rousing and lift the temperature a couple of degrees.
Without patience, life becomes difficult and the sooner it's finished, the better.

Thanks i'll dig out some bubble wrap and give this a try.
Meanwhile i've given it a stir and cranked the temperature up a couple of degrees. See what happens next.
