Glad I came across this thread, had a cheeky Dec break in Belgium 2 weeks ago and it reminded me how good their beers are. So a Dubbel brew is planned early in the new year and I was trying to decided which MJ yeast to use.

Many thanks, That is incredibly useful. I can’t wait to get my fermentation temperature control to try this. M41 it will be, to try initially.

I hadn’t come across the idea of adding the simple sugars on day two before either, that is interesting and makes sense.
Let us know how you get on! By the way, I used 2 packs, rehydrated in my 21L of 1.069 (after sugar... it was 1.062 before). I got activity within 12 hours; some report slower starts.

Will do, may be a while as some clearing is needed to make room for the kit, but the opportunities for more diverse brewing are exciting and Belgian styles are at the top of the list.
