Wheat Beer mineral additions

(That's water to the rest of us!) Beer is about 95% water, so if you want to discuss water treatment, filtering etc this is the place to do it!

Wheat Beer mineral additions

Post by Vossy1 » Fri Apr 04, 2008 1:22 am

I'm going to make a Hefe, based on seveneers Hefe and would like to know what mineral profile to aim for.
There are several water profiles available in Beersmith, ie, Munchen, Dortmund etc but I'm unsure which one to go for (my gut instinct tells me Munchen)
I've got quite a bit of Mittlefruh to use up and this seems like a good cause

Any help much appreciated

Don't bleedin' well try and match a water profile as even the brewers in the region treat the water to make it more acceptable to brewing the type of beer they make!

Wheat beers are 'soft' and 'gentle' beers so you don't want a huge amount of gypsum . . . you also don't want a huge amount of calcium chloride either.

I'd go for a 1:2 mix of gypsum:calcium chloride probably aiming for 100-150mg of calcium per litre
