Forgot DLS HELP!

(That's water to the rest of us!) Beer is about 95% water, so if you want to discuss water treatment, filtering etc this is the place to do it!

Forgot DLS HELP!

Post by scarer » Fri Sep 05, 2008 2:24 pm

I'm brewing a IPA and added my first stage DLS to the grist and CLS to my liquor but I forgot to add the second stage DLS at the start of the boil.

The boil has had 90mins now, should I leave it or can I still add the salts somehow?

Cheers

Just leave it. It won't help adding it now. If you added the CRS then the pH should be OK anyway.

To follow up on what Steve said, The reason why you might want to add DLS to the boil is to ensure that there is enough Calcium in the wort to ensure a) a good hot break (floc of protiens) and b) good yeast floc at the end of the ferment. Knowing several brewers in your area, I can take a good guess at your water composition, and say that this is not a situation you are likely to find yourself in (Unless perhaps you used a excess of pH 5.2. . . .) as your water comes into the category of very hard and has a lot of calcium in it anyway

Cheers Aleman, I was wondering that so thanks for the explanation.

Does it actually affect the taste or the hop bitterness in anyway?

Well the level of Chloride and Sulphate have an effect on the way flavour is perceived, but generally your hard water will have sufficient anyway. . . . And DLS doesn't really give you the ability to tailor the taste balance to Hop / Malt flavours anyway as the ratio chloride/sulphate is constant.
