Bicarbonates

(That's water to the rest of us!) Beer is about 95% water, so if you want to discuss water treatment, filtering etc this is the place to do it!

Bicarbonates

Bicarbonates apparently need to be under control. My spring water lists a figure of 80, which I'm assuming is 80 ppm. To reduce this figure, can I add a small amount(1 or 2 drops of lactic acid?) This would be to roughly 23 liters. The lactic acid I have is 88% strength.

Man, that comes out to be .06154 of an ounce. I think I'll just add two drops and let it be. This should be interesting. I'm planning on brewing something here soon for New Years. I'll use 5g of gypsum in both the mash and HLT, along with a tad of kosher salt and another tad of epsom salts. Thanks again for your help Chris.
