(That's water to the rest of us!) Beer is about 95% water, so if you want to discuss water treatment, filtering etc this is the place to do it!

Hi guys i have recived my water report from my water supplier and guess what...... it makes no sense. I can't find any of things that i need on the list of stuff that's in my water.There is no mension of calicum at all there is no mension of magnesium sulphate only magnesium dioxide there was a mention of ph it said betwwen 6-5 10.0. There was also sulphate and chloride mentioned but not which ones there are .Can anybody help to make sense of this?

Thanx for the advice i will phone the water board. Iam making a dark beligum style christmas ale next week and iam trying to make sure it's done the best i can.Iam right that dark beers favour more alkline ph 5-5/5-7 and that pale ales favour more acidic ph5-0/5-3 ?. I just find this side of brewing confusing but when it comes to recipes iam pritty good due to the fact that i was a fine dining chef for 10 years and then i got sick and had to chuck it in but never mind i still have my ale and that's all that counts.

Hi and thanx for all the advice.I got my total alkalintey/calcium report back my total alkalintey at it's averge is 128 and my calcium levels at there averge is 51. I was thinking caus iam brewing my strong dark chritmas ale tomorrow iam going to have to add more alaklintey to balance the dark malt. I read your topic on this and caus brewpaks standard 150ppm for stouts i need to add some bicarbonate of soda. By the scales i have i need to add 6 grams to a 2 and half gall mash.
