Using gelatin prior to bottling

(That's water to the rest of us!) Beer is about 95% water, so if you want to discuss water treatment, filtering etc this is the place to do it!

Using gelatin prior to bottling

I bottle my beer but would still love to benefit from the effects of gelatin. Can I:

Rack my beer into a secondary vessel with gelatin when fermentation is completed

Leave for a week to drop bright

Transfer to bottling bucket leaving sediment behind and bottle as per normal?

As you suggest is about the best way. Transferring the gelatine into the bottles is not a good idea,as it disturbs easily when you pour.
