I boiled around 30 litres of water last Friday in preparation for brewing the following day (my water is super hard so needs boiling to get rid of the chalk). For reasons beyond my control I have had to delay brewday and am wondering how long I can keep that water, currently in a plastic FV, as it seems a waste of time, water and gas to boil up another load.

I'd be inclined to boil it again. Water does harbour bugs. Once it's been boiled there won't be any chlorine present to keep it fresh. It might last a few days, but at some point will probably develop a scum and start smelling like a dirty fish tank. Keeping it cold and dark and adding a Campden tablet per gallon will probably keep it fresh almost indefinitely, though.
