Calcium Carbonate Supplier

(That's water to the rest of us!) Beer is about 95% water, so if you want to discuss water treatment, filtering etc this is the place to do it!

Anyone know where I can buy pure calcium carbonate for water treatment?

I would use sodium carbonate as it dissolves in the mash easier, calcium carbonate ,like gypsum, is insoluble (well unless you dissolve it in an acid):

Chalk does not dissolve quickly enough to provide significant pH moderation for the mash. There is apparently a small percentage of stronger acids in the mash and they do react and are neutralized by a chalk addition. The problem is that this chalk addition only provides a rise of about 0.1 to 0.2 pH units...no matter how much chalk you add. As Murphy mentions, dissolution of chalk requires an acid to execute. In natural waters, its typically carbonic acid. But that reaction takes days to complete. This is a very slow reaction.

Sodium carbonate should be a good alternative for adding alkalinity. I don't know where to pick that stuff up in the US, but baking soda (sodium bicarbonate) is widely available. If your water already has very low sodium, then adding either of these minerals are a good option. With baking soda, you can add over 80 ppm alkalinity while only adding 40 ppm sodium. That is not a huge increase and that sodium level is typically OK for flavor.

I'm waiting for that Brewing Series book Water to be delivered. I'm not really up on my water additions. Amazon seem to not want to deliver it to me.

Its still under development. I've been assisting with some technical editing along with AJ DeLange. It is getting closer to finalization.

Awesome. I'm really looking forward to reading it. I imagine it will be a struggle but a worthwhile read. Amazon seem to just make up release dates willy nilly.
