I am about to embark on my first AG batch and I am making sure that I am prepared in all respects.
Unfortunately, where I live (Hertfordshire) the water has a very high alkalinity. I have obtained a local water report and checked the alkalinity with a Salifert testing kit (it requires more than one syringe to turn purple/pink!). I have bought some CRS and will be using this which should be fine for the beer I will be brewing soon.
However, I would like to have access to another source of water for other brews I am planning (e.g. pilsners etc) - I also need water with a lower alkalinity for the stan san. I have bought some Tesco Value water and this seems perfect for the task as the Salifert kit shows that it is very low in alkalinity.
Now my question is does anyone know the mineral content of Tesco Value water (specifically, the sulfate and chloride values - I have a Salifert calcium kit, so I will be testing it for that)? If you do, I'd be grateful if you could post them here. Sadly, the nearest Asda is some distance away so not very convenient for me to buy their basic water.
Also, how much emphasis do people generally place on adjusting the sodium content?

Thanks for your response - I'll definitely give that a go with the star san. I'll also forget the sodium at this stage.

Many years ago I grew plants that were particularly picky about the water they drank. after a lot of testing, trial and error I discovered that Morrisons was the closest I could get to pH neutral.
