I'm really tempted to do a gallon brew of mead. It could probably be done in less than an hour, I reckon -- I think it only needs to be boiled for 15 minutes.

Keep it going DaaB, there will be natural yeasts in the cherry skins, but if well washed hopefully your ale yeast will dominate, you Belgian you! :D

I guess I should report that I succeeded in oxidising some of my bottles of beer... :(

Whilst they make their beer lambically, I believe such stallwarts as Belle Vue Kriek make their beers from pale malts then age them, then add cherries, then age them again... ;)
