How Different, As you have done two batches of Dunkel why not just a straight wheat beer

2.75Kg Lager Malt
1.25Kg Wheat Malt

Mash (Thick) at 30C for 20 minutes, then add enough hot water to bring it up to 65C for another 60-70 minutes.

Lauter and Sparge and then boil for 90 minutes with

40g Hallertau (4.8%).

Pitch onto a SMALL amount of the 380, at 12C and allow to rise to 18C over 4 or 5 days. You'll get a really nice balanced wheat.

Of course if you want really different then there is always a Berliner weisse :D I can find a recipe and method for Kindl if you are interested ;)

Oh if you haven't ever had a Kindl Weisse you are missing the nectar of the gods, it is a truly awesome beer.

I will have to try it again. Last time I had it (about 7 years ago) I thought it was bottled battery acid...I've gotten to like sour beers in the meantime so maybe I'd like it now.

BTW, there was a recent Jamil Show on the Brewing Network about the style

Oops sorry  that was a spelling mistake that should have read AWFUL beer :D I actually like soured beers so bottled battery acid is a fair description - refreshing though

Personally, I'd swap these two amounts around. A german wheat is best with at least 50% wheat by most recommendations, and by tradition (but not law...), and 60/40 is the split I prefer. Some have even gone higher.
You could use some or all munich malt for the non-wheat too, but lager/pils malt will work well.
Almost any noble hop is good but hallertau of some description is a great choice. 20IBUs max but many prefer as low as 8. I like the middle ground, 12 or so...
