I'm due to bottle up my super cider tomorrow so picked up another kit to keep the FV happy. :)

Description: A full & refreshing porter style dark ale rich in brown malt with a beautiful creamy head. Honey Porter Special Addition 'If you wish to convert this into a delicious premium honey porter add 400g of light clover honey to the fermenter. It is important to use very light honey only.

Kit contains 2 cans of gloop, sachet of Safale us-05 yeast and a 12g teabag of fuggles finishing hops.
Think i'll pop 400g light Manuka honey in and i also fancy brewing it up the way DaaB does his Brupak kits.
Still can't work out how to post pic's so i'll put them in a Brew Gallery on my Pbase site with a link when i get time.

I'm going into town tomorrow so i could easily get some more teabags of fuggles. How much more do you think would be good?

Obviously, they had sold the last two bags by the time i got there. :x

So, in a fit of desperation/madness/ingenuity i decided to use my Sticklebract hops. Along with the 12g 'tea bag' of Fuggles pellets.
The packaging for the Sticklebract hops claims 'well favoured internationally, is the 'Prima Donna' of the varieties to produce. A report on NZ hops from a major German hop broker claimed Sticklebract as their favourite...having aromatic qualities comparable to the european variety Northern Brewer. Sounds like marketing blurb to me :=P I bought a little sack to put my hops in. Weighed out 24g(as a direct replacement for DaaB's suggestion-but he did suggest Fuggles, i have my fingers crossed) and followed his boil for ten mins, remove from heat, add 12g fuggles, leave for 15 mins directions. I figured i wouldn't 'ruin' the beer just alter it's hop characteristics. Am i right?

I followed DaaB's easy-to-follow instructions, made my first yeast starter ever. It was great hearing it fizz away when everything went quiet every now and then. Boiled my extract for 10 mins, boiled my hops-as above. Everything in the FV and a little cooling down in the sink. Half hour later FV temp was at 24 and i pitched my yeast starter. Gave it a good ol stir to oxygenate well and took a sample for an SG reading. 1048. Hope this will ferment down to 1010.

The kit recommends adding 400g light clover honey to convert kit to a honey porter kit. Which sounded great to me. I was hoping when they said light they meant light in colour??? The one i got was white and light. 8) Put it in fermenter along with hot hop wort.

2hrs since i fitted airlock and the water level is starting to get pushed up-activity. My fastest to date. Normally takes 24hrs+ before anything happens.

I have high hopes for this brew. Thanks Daab and everyone else who has helped with tips. I owe you all a beer :D

P.S. Sorry Daab i was too busy concentrating to take pic's as well as read instructions. Now i've done it once though i'll have a go next time round.

If you followed the method of starting off the yeast I mention in the website, that's a great way to kick start fermentation 8)

As for the hops, unfortunately not all hops are directly replaceable as they differ in strength. Fortunately I don't foresee any problems with only a 10 min boil. The worst that is likely to happen is you will find the flavour a little strong and you need to wait a few extra weeks for it to settle down.

All you do is add the weight and the alpha acid contents of each hop (the seller should tell you this or it should be written on the packet). In most cases with good flavour hops that are moderately low in alpha acid I don't bother but some varieties can be very low or very high and it's probably worth making little adjustments.
I will always do a starter like that now. 3 1/2 hrs later and the Co2 is halfway down the first tube of the bottom 'V'. I have put the remaining spraymalt in a resealable bag. Is it best stored in the fridge?

I cannot find an AA for the Sticklebract. They are listed second on the packaging and the first are Green Bullet- 'which has averaged 12%plus alpha over ten years' The third are Super Alpha 'A growers hop with perhaps not the incredible Alpha resin content of the other two but always an acceptable 10% plus'
Does that help in any way? I don't know what a good percent is for Alpha???

Quite lucky then that i added them at the beginning and boiled for a bit then i guess. :D

I'm quite happy to let this mature out if need be. I want to set some beers aside from now on for my wedding in march. Especially as some English friends are coming over for the occasion. Can't have them drinking rubbish kiwi beer can i? 8)

4 1/2hrs after pitching and she blows! 8) I'm expecting a good flow of bubbles in the morning. High hopes for this brew. Especially as my others have, so far, been great.

Off to bed now with the delightful sound of 3 FV's bubbling away in the room next door...
