I think I have the processes clear in my head. I will be following the Wheeler method from BYORAAH.

There are one or two things I'm confused about, and that is the much mentioned 1006 gravity figure after sparging and it being the time to stop.

I am fly sparging but I am confused about how I should adjust the hydro reading for temperature. The wort will be well above 20C so is the 1006 an adjusted figure, or is it the actual reading from the hot wort.
Also I'm assuming that this figure is from the total wort collected i.e. from the first more concentrated runnings plus the sparged runnings :shock:

Lastly, am I right in thinking that the target gravity I'm aiming for (1038 OG) occurs because of the boiling process and evaporation/ concentration of the wort.

if it's hot I stop at just below 1000 about 998 should be good there is a great conversion table somewhere but can't seem to find it

Have a look a the sticky posted by Gurgeh in the Brewing Equipment section of the forum.
And for the final gravity, you've got that right yourself.
Hope your first AG goes well :!: It sure will taste good compared to any kit beers you've done before :!:

I'm going to suggest something a bit heretic here but I wouldn't even check it. I've been all grain brewing for over two years and i've only bothered a couple of times. I just run a little of the wort on to my fingers and taste it - if it's still sweet, i keep it going, if it's watery I stop it and start boiling. Never had any astringency problems.

As long as you're running off fairly slowly and for around 30-45 minutes you shouldn't have a problem.

Nope, it's the runnings being produced at time of taking the sample

Yes (but I assume you were thinking that the pre-boil gravity would be 1006 from your previous question, which isn't the case). The wort gravity will increase throughout the boil as water evaporates off.

It refers to the gravity of the wort flowing out of your mash tun at any particular time and not the gravity of your collected wort.

Once you've collected close to your final volume you want to collect a sample as it's flowing and cool it to 20C so you can test it with your hydrometer (or use a conversion formula for higher temps). Then repeat every now and then until you either have enough wort or your runoff gets down to 1.006.

On average......how long is a brew day for you guys?

I'm looking to finish with 20Lts so........6 hours if all goes to plan.

6hrs is a good day timetable 8 and you won't be far out. put the camera on charge now....

My first AG, which was a few weeks ago took 8 hrs plus. Mainly because i fannied about like a girl in a shoe shop :roll:
My last(AG#6) took 6 hrs including 90 min mash & boil and a bit of a clean up. 8)


And i've enjoyed every single second of it. :D
