Running out of time

Hi all. ive got a 23l batch of geordies yorkshire bitter in the fermenter for nine days now. start reading was 1038 and after a vigarous fermention its now at 1008. my problem is this. the air lock is still giving the odd glug so im thinking its not quite finished yet and im off on holiday for a week tomorrow afternoon will i be ok to barrel it in the morning even if its still giving off the odd glug.

In my opinion just leave it another week and do it when you get back from holiday - 16 days in the fermenter is no problem at all. You could even rouse it up before you go if you like.

I had thought of that but i was once told that the dead yeast can give the beer a bad taste.

Nah.

After a couple of months maybe, but 16 days will be fine. Should even help a bit.

A couple of weeks in the fermenter won't hurt.

Incidentally, I wouldn't worry about the odd bubble, CO2 continues to escape for a while after the fermentation is finished. A more reliable guide of finishing is 3 or more days at a steady FG.

great thanks guys i will give it a gentle stir then relax in sunny cleethorpes safe in the knowledge that my beer will be improving and not dying. cheers carl :D
