I'm not sure about hop flavour and aroma increasing with maturity (normally its the other way round), but hoping the latter will happen to make it more to my taste.

OK, well I dry-hopped this with 25g of East Kent Goldings a week ago and it has really turned a corner - now there's more of a hop flavour and aroma to work with the malt and bitterness and its a pleasant easy-drinker.
Shame that its so hard to predict the effect of the older hops that are often on the shelves of the LHBS these days

Good to hear the ole Landlady has turned the corner
I think at best late additions are a inexact science for the homebrewer at best. As the only information we have to hand is the AA% as tested at the hop merchants prior to packaging.
And now the sawdust at the bottom of the hop drawer is being sold onto the market I think it is time to invest in Hop Crystals to channel the hop oils and resins to their best to achieve optimal result, of course these work at best when on a Lupus Layline

Don't forget to wear flouro tie-dye and drink lemongrass chai cooled to 80°c for those intense aroma bursts

Kinda threw myself into this one during my time off from work. Was going to ask for some tips on here but my PC decided to turn itself into an expensive door stop for a couple of days
Heres my recipe below obviously taken from the one posted on page 1 but with what I ended up doing on the day. Calculations missing from the bitterness as wasn't quite sure as was also missing off some of the packets i had bought. Let me know what you think of if theres anything else I can try for next time. Tasted it out of the fermenting bucket yesterday and was tasty, not as bitter as I was expecting but tasty.
Extract Landlady
Original Gravity: 1.039 (would have been slightly higher but had some over flow problems while boiling
)
Ingredients:
2kg Medium Spray Malt
150 g Crystal Malt 30°L
35 g Challenger - added during boil, boiled 35 min
1 tsp Irish moss - added during boil, boiled 10 min
10 g Styrian Goldings - added during boil, boiled 10 min
7 g Challenger - added during boil, boiled 10 min
10 g Styrian Goldings - steeped after boil
10 g Goldings - steeped after boil
20 litres in total with 1/2 campden tblt and 1/2 tsp yeast nutrient
Safale S-04
If it turns out well I would probably try and find some more bitter hops for the long boil and increase the water and add another 500g of spray malt, probably light as its quite a dark beer.

You'll have to let us know how it comes out in the end - mine wasn't exactly to my taste but my mates had no problem in polishing off more than half a corni in one sitting a while back
