Hello people, new member here! Brewing a batch of Ambiorix at the moment, it's just been moved to a "secondary" bin after about 10 days in fermentation. Any thoughts on how long I should leave it in there before I bottle it?

a week or so maybe, just don't leave it too long or too much yeast may drop out and you'll have a problem getting any fizz in your bottles

oh and welcome to the forum

Great, thanks. I'll try get home early from work maybe Tues or Wed (that'll be 5/6 days) and get the bottling done!

Thanks guys - I just finished bottling this evening! Learnt a few lessons, but kept the siphon all the way through and only needed one towel's absorbent abilities! Wychwood ale bottles have a cursed top which doesn't take a crown cap. Bear this in mind all you other brewers!

You may find (as I did) that those bottles have now bent the innards of your capper - I had to get a new one :x

4 weeks on - the beer is just about ready, I think. I'm going to donate a couple of bottles and see what others think. It's very sweet, and acidic. It might benefit from a couple more weeks of conditioning.....

That said, it seems to have worked out. A drinkable beer, if not perfectly to my taste, with a reasonable amount of fizz in it! Time to try another. I've been thinking and reading a little about the Fixby Gold, which might be what I'll get!!
