OK mate. I'll also miss the next NHB meeting as I'll be in the Lakes but I'm sure a cheeky beer or two at FFF can be arranged sometime, I'll PM you when appropriate (won't be this week or next)

Both beers fermenting but quite slowly. Never seem to get them going off like a rocket...They both have a thick layer of yeast across the top looking rather like brown underlay. Yet to have a yeast froth to the extent it climbs out of the bucket. Am I under aerating it?

Buggrit. Re-pitched {edit I don't mean re-pitch I mean added more f- yeast] tonight. I MUST be under pitching or under-aerating as nothing happens very quickly. seems to be going some more now...as you'd expect.

Wednesday night (brewed Saturday) SG 1015 and it appears to have stopped. Certainly nothing has happened today, as it was the same reading this morning. Any advice? I've roused it daily from Monday onwards as it has been very slow from then on. OG 1047 yeast is S04...

I am a monumental t*t and I freely admit it.
1013 was the SG I was aiming for with this recipe, so 1014 is not bad - I'm not sure why I had it in my head it was lower than 1010 but I had. OK so it is a little over, but I'm not sure why I was expecting something a lot lower, there was not sufficient fermentable extract to drive it down.

Racked the two beers for 2ndry fermentation and came back to them this week after a week's hols. Both beers perfectly clear and superb (by my reckoning), especially the Brewer's Gold which is knockout. Woe is me! I agreed to give half away to a friend!

Brewer's Gold - OG 1045 FG 1007 4.95% pretty much spot on
Best - OG 1047 FG 1013 4.43% again pretty much spot on.
My best is a little 'muddy', perhaps. From listening to Basic Brewing Radio I think I need to acidify the mash. Any one agree?
