pressing tomorrow

while you are all brewing at the moment i'm pressing apple this week end.

everything is in place (cider press, mill, vessel and of course: beer for the workers :lol:
apples have been sorted and are ready to be crushed we start at 10 am 8)
it will took 2 days to press it :)
we're making 700 liters this week end with 3 cider press 8-[ hope everythings go well

time to do it now :)

will try to send some pics

the mixing of apple for this pressing is /
-31% of sweet apple variéty: "douce coêtligné"
-31% of sweet/bitter, var: "douce moên" + "peau de chien"
-30% of bitter, var : "marie menard" + " kermerrien"
-8% of acid , var: "judor"

these are all very good breton's varieties of apples and this mixing should give a good bitter/sweet of sparkling cider.

no chance, there's no ox here :lol:

nearly done, we"re at 750L and we'll get about 100L for tomorow 8)
we've left the cider press for the night, we'll press a bit tomorow , there is still some juice coming.
i had a better efficiency that i thought, due to the big cider press wich give a lots of juice.
the OG is 1055 wich is good and the mixing of apple give a good color .
i've put the FV at 9° to slow the beginning of the fermentation and help the juice to clarify ( "le chapeau brun") this could be done in 3-8 days and the wort does not lost more than 1-2 point during that time.

well , in fact i don't need to use yeast , it'll ferment with the wild yeast :)

the OG is still at 1055, which is great , actually the wort is starting to clarify and if everything go well i could get that "chapeau brun" that one i'm looking for and which is the most difficult to do , it could be done this week end. i'll send you pics of it as you can really see what i mean 8)
