Hillbilly Porter

Post by Horden Hillbilly » Sun Dec 14, 2008 3:36 pm

I have realised that I have 1 lieu day left at work which must be used before I break up for Christmas (Thursday), so I have decided to take it tomorrow & do a brew.

This is my 1st go at a Porter, it is based on Mark Ollosson's market porter. I have upped the og from 1036 to 1044, ditched the small amount of sugar & swapped the hops from Northdown to Progress, just to use up some of my hop mountain in the fridge! This recipe has had the once over & approval from a seasoned dark beer brewer. Cheers Garth!

Pale Malt 3972g.
Crystal Malt 370g.
Chocolate Malt 140g.
Roast Barley 140g.
Progress hops start of boil 25 ebu.
Progress hops last 15 mins 16g.
Safale S-04 yeast.

I will mash this at around the 67c mark as I want the malt character to dominate this brew.

I`ll be brewing along side you then tomorrow, should have been today but boiler gave up the ghost.
I`m doing an overnight mash, so i can hit the ground running tomorrow morning
Gonna do Martial Ants Just Cascade, and hope this one doesn`t come out as TCP like the last one.
But i`ve since started using campden so should be ok.

Have a good brew day.
