up-ing the acohol level?
Hi i am just about to start my 2nd brew so this might be premature. To increase the alcohol level do i add more suger at the fermenting stage. If so how much for my 10 ltr kit (brubox) and what type of sugar would be best for the 80 shilling ale.

You can add sugar to up the alcohol level, but more than around 250grams than the specified sugar rate will make the beer watery. The best way to do it is add perhaps a half kilo of spraymalt extra and knock the water level down (although with a 10L kit this might be a bit of a pain)

The simplest way to increase the ABV of your beer is to make less. Use less water i.e make 4 gallons instead of 5. The flavour ballance will stay the same but the alcohol level will be higher. Of course you do end up with less beer but as kits are so easy to make I doubt you'd notice if you knock two up at the same time
