Matts Truish Mild
Hello,
My first post on this forum. And about my tenth AG brew. Before that it was all country wines, so still a bit slapdash in my approach to AG brewing!
I chose to make this brew for a number of reasons. I wanted to make a mild style beer. I am going to canada for 6 months and still want it to be good on return. I needed to clear the cupboards of my grain because i want to buy fresh on return!
It may slip slighty in to a brown ale type beer. Your comments are appreciated.
Grain Bill
Crystal Malt 130 EBC 2 lbs. 3.6 oz 1.010 kg 15.4%
Chocolate Malt 1050 EBC 1 lbs. 9.6 oz 275 grams 4.2%
Roasted Barley 1350 EBC 0 lbs. 0.7 oz 20 grams 0.3%
Wheat Malt 3.5 EBC 1 lbs. 8.8 oz 250 grams 3.8%
Pale Malt 5 EBC 11 lbs. 0.4 oz 5 kg 76.3%
Mash profile: 3 hours (why rush?) 66C
I am going to sparge tonight and then boil tomorrow morning with the hops.
I am open to suggestions on the hops..... I have EK goldings, Saaz, Pilgrim, Fuggles and Hallertau.
I am thinking:
Hops:
Fuggle Whole 4.9 % 90 mins 0 lbs. 2.8 oz 80 grams 80%
Fuggle Whole 4.9 % 15 mins 0 lbs. 0.7 oz 20 grams 20%
With a potential finish off:
Final Volume: 25 Litres
Original Gravity: 1.058
Final Gravity: 1.017
Alcohol Content: 5.3% ABV
Yeast S04
Any ideas or comments?

Smells like a cross between antique funiture and syrup!
As you can see. A bit slapdash not much sterility (until after the boil)
One thing concerns me about warm wort oxidizing before the boil.... am i right to worry?

He's the boss of the tele when I'm in the kitchen brewing!
I am slighty concerned about the designation of the brew..... I never have delved in to the world of brown. Mild, porter, brown ale..... I know if I had to enter it in to a competion it would have to meet parameters for a specific type of ale..... What are they? Or can i call it whatever I want.....

Fuggles added prior to the hot break. Stupid me. I always do at least one thing wrong/different.
And a bit of Blesseds Black Beard Stout to make the night a bit warmer.... one of my own recipies, and delicious. (heavily hopped with pilgrim(harsh!))

Add hops before reaching the boil is called 'first wort hopping' is supposed to produce a smoother bitterness so maybe its not so much of a cockup after all.

As I say... I am very slapdash. Often it bears great results..... But on the odd occasion the bath gets 25 litres naf beer. I used to scim the foam off the boil too... I have since read that you dont need to do that either!

I went for 24 litres, rather than 25. Achieving an SG of 1060. I think i need the space ready for the volcano.... i know its coming.
Its all going to get bottled for when i return to the UK in november!

Its predicted at around 5.4 %. So it should keep. Not very modern mild in its style... I am thinking its qualities may be more brown ale or porter ish. Its also very hoppy as I steeped it over night with the 20g fuggles (and i chucked some other spare hops in too, i cant help myself!). This was because i broke my hydrometer last night, so i had to run out and buy one this morning!

Been investigating, and I think this style is closer to a porter than a mild.... but I will wait for a tester in bottle and glass before I do anything rash like re-naming it!

Well I bottled it in to 36 Bottles varing from 500ml up to 750ml.
The colour is dark dark brown when in glass, but whenheld to the light has a lovely firey red colour.
Initial sample:
It smells of chocolate and banana.
The hops are there but not over powering, slightly bitter. Tastes of bonfire toffee.
Slightly sweet taste.
Very nice already.
Can't wait for it mature.
Final gravity was 1019...... which makes it around 5 - 5.4% depending on whos calculation you believe.
I hope it will last the 6 months I am away

Me and the girl are old before our time!
I'll be supping more in about 3 weeks and updating if things change.

Well its reached that time......... all bottled with its brothers on its shelf....

Weeeelll it came out more like a porter/stout. So hence the name change! Really really tasty. Some stouts are quite boring in the malt, but this was like the complexety of a mild with the colour of a porter/stout... hence og1060 fg1019.... lots of nice unfermentables!
also after a few sips! head retention no probs either.
Good brewing, great drinking... matt
