reducing a kits water volume?

Mornin all,

there is quite a lot of talk on here about reducing the water added to a kit to up the alcohol % a little but i cant find a thread that actually says what this reduction is. Can anyone that has done this just let me know what they reduce a kit down to? Ive got some old office water bottles that hold 18.5 litres but I wasnt sure whether knocking it down from 23 litres to 18.5 was going over board?

Could someone help me understand this reducing bit,

ive only ever done brews at 19 litres so i guess 18.5 would be ok but there would be no room for the crust so you would have to use a blow off tube or something.

you will also increase the bitterness markedly as well which is definitely something to consider.
