Are yeasts that important to the style of ale?

Share your experiences of using brewing yeast.

any good ale yeast will do, it's down to personal preference. I'm quite happy using Gervin English ale yeast for kegged beers, its very attenuative and produces quite a dry beer which I like and Safale 04 for bottled beers as it settles so well and forms a very compact and stable sediment.

Thanks, what yeast would you suggest for a woodfordes or brupaks.

When cloning an existing recipe I normally use a yeast strain associated with that area. For example for London pride I would use something like Wyeast London Ale 1028/London III 1318 or White Labs WLP013. In fact I'm using the WLP013 for a London porter clone I'm brewing at the mo!

If I create my own recipe I just choose a yeast with the flavour characteristics I want for that particular brew!

I totally agree with Tim though, when I used to brew mainly kits and used the kit yeast, even though they were different styles of Ale, there was an underlying sameness about them (I put it down to being a 'Homebrew' taste)....changing the yeast strain changed all that though! :D

Apparently Wyeast 1968 is the Fullers yeast and having brewed a couple of London Pride clones I can well believe it.

WLP 002 is supposed to be the same as WY1968, I'd like to do a side by side of London Pride fermented with each to find out. Some sources suggest that WY 1318 is Youngs yeast, and 1028 is Bass Worthington Whiteshield, and WLP 013 is supposed to be that strain also. Here's a link that has sources of some strains. While I don't think all of these are absolutely correct, it's a good start.
