WHAT WOULD YOU MAKE FROM THIS ?

I have the following ingredients to use up. I can use all or some of them. The idea being to clear the bits up and and then buy fresh for the next brew. Does anyone have a good recipe or just an idea rather than my cavalier approach of throw it in, cook it and see what ferments

Maris Otter................tonnes
torrefied wheat...........250g
wheat malt................500g
pale crystal malt..........100g
flaked maize..............150g

halletau hops..............80g
golding.....................50g
fuggle......................20g
challenger..................60g

I could buy any mising bits if there is a special brew out there! I would love to use the halletau in something.

You're gonna be looking at a ordinary, best or strong bitter I guess - pale malt as the base, the 100g crystal and some wheat malt or torrified wheat for a bit of head retention.

You could use the hallertau (hersbrucker I assume? Hallertau is the region they are grown in) in a bitter too, though some don't like it.

How about (fairly simple - I did something fairly similar myself recently using styrians instead of EKGs, and caramalt at 200g; but needed more bitterness so upped it here - it worked pretty well and my me and my mates saw away a corny fairly sharpish ):

4.25kg pale
100g pale crystal
250g wheat malt
Mash 67C
90min: Challenger 35g (assuming 7%), Hersbrucker (2%) 40g
15min: Hersbrucker 20g, Goldings 25g
0min: Goldings 25g
Ferment with something to let the hops come through - US05/Nottingham perhaps.

Could even swap out some pale and use up your wheat malt if you want, or you could keep it for the next brew.

Mmmmm sounds like a plan.........the "halletau" simpley says just that on the label. That does seem to be taking care of a good part of the oddments.

What's the percentage on them? Hallertau Northern Brewer is somewhat higher in AA% than Hersbrucker!

When I said that's all it says on the pack ...................that really is ALL !!!! They are Youngs loose packed halletau hops ..........no more info at all

If I remember correctly they are a lager style hop? Would I need a good amount at the start to produce any bittering and then again late for flavour/aroma?

I should have mentioned, in terms of the grain bill (I can adjust the weights) I usually get 85% efficiency.

Hallertau makes an excellent aroma hop in bitters. I was blinkered into thinking of them as purely a lager hop until I tried them. At least you wont be too concerned about the AA if you bung them in for aroma.

With that lot I'd made a nice 4% pale ale, chuck in all the crystal as 100g wont add too much colour (especially if its 60EBC). About 170g of the wheat malt (assuming a 23L brew length) and bitter to around 32 IBU with equal amounts of Goldings and Challenger. Steep 20gm of Hallertau.

It's great getting opinion and experience from others who have used things in "unusual" ways . It saves loads of experimenting time and brews which turn out less favourable. I am happy to drink a wide range of flavours and bitternes, so not much goes to waste. I'm still searching for the one when I say, WOW, that's the one I will call the "house special" . Maybe this will be the one!

I must say I do like the sound of that big halletau addition..........whatever it turns out to be will probably be at the end of this week. I'm getting excited now

Well................It's been maturing for about 2 weeks now so I had a little taste.........pretty good! Not as bitter as it may have been.

Here's what I did in the end...........Called it HOP ALONG

4000g MO
250g Wheat malt
100g Crystal malt

50g Challenger @ 80 mins
25g Goldings @ 80mins
35g Goldings @ 15mins
35g Fuggles @ 15mins
30g Halletau @ 15mins
7g Irish Moss @ 15 mins

Yeast.............Gervin English ale

Mash..............80 mins @ 66C

OG................1044

FG.................1010

ABV................4.5%

I reckon this one will smooth out a little as it matures and make a nice summer ale.....................Pitty it's nearly winter
