ive just put some of this on
disolved all the sugar 3kg all at once in 2.5 litres of boiling water
lemon juice and yeast nut in to the dj cooler water into the dj and pitched the yeast
gave it a good shake .airlock on and was bubbling away in less than 4 hours
will wait and see how it turns out
looking strange as it seems to have divided with a cloudy top layer and a clearer bottom layer
i assume that the allisons bread yeast is a top feeder

Liking the sound of this. Might try a gallon's worth before I go large scale though.

I added extra sugar when I racked it off, not sure what the total content would have been as it was a bit hit and miss but if it works out I'll try again and keep a log.
deepinvader,

I haven't started mine yet but I'm interested on how clear it gets. The Condessa kits would be a bit yellow until carbon was added, so I'm watching with interest.......

Mine is going well now, looks a bit like milky water, fingers crossed and I might have to finally put the finishing touches to the home made distillation filter and see how well that works

Seemed to be working forever !!!

One gallon finished before the rest so gave it a try, worked well I think, haven't tried drinking it yet but looks good

Looks good but you've flavoured it now. Was it absolutely clear? Like water clear I mean?

it reccomends that you flavour it or drink with a mixer

Absolutely, as clear as Vodka and sharp, not at all sweet but I did use Youngs Super Yeast which they say will tolerate a lot higher alchohol content before it falls over.

Before, not managed to get the filter sealed efficiently yet, steam kept leaking so might have to re-think the boiler section. No idea what the final alchohol content is, I'll wait and see how many people fall over at my daughter's BBQ Saturday

Here's the next gallon, just about finished and cleared with Kwick Clear. That's a bottle of Vodka standing behind the DJ

Not sure what would be best. I've a mate who uses bread yeast for mead as it gets so far and falls over, leaves the mead very sweet and syrupy. I'm using Youngs Super Yeast which keeps going so perhaps a question to the knowledgable lads on here regarding yeast might help.
