No pictures but this is what I decided on.

Brewlength : 23 litres
Bitterness : 46 IBU
Colour : 32 EBC
OG 1052

MO - 4.5Kg
Crystal - 270g
Roast Barley - 100g
Torr Wheat - 200g

Fuggles 3.6%AA 35g 90 mins
EKG 4.8%AA 10g 90 mins
Fuggles 3.6%AA 25g 30 mins
EKG 4.8%AA 30g 30 mins
EKG 4.8%AA 30g 10 mins
EKG 4.8%AA 15g 0 mins @ 80 degrees

WLP037 yeast

Water treatment for bitter from Grahams calculator

All went smootly apart from a slow runoff from the mash which I havent had before. I suspect this may be due to using the last of a sack of MO. Efficiency was slightly lower than planned but not worringly so.

Edit: These new fangled hop varieties  with lower AA% compared to my more recent brews meant I had half of a hop garden in the bottom of my boiler when I'd finished

OK - here's what I'm doing. I changed plans because the yeast didn't arrive in time, so I'm doing a best bitter. It does have fuggles in as per Jims formula (not a load, as I want to keep enough back to do the original plan later :=P ), it has goldings for aroma, and it's probably gonna have a bit of colour to it:

3.2kg Maris Otter
240g Crystal (120EBC)
240g Munich
240g Aromatic Malt
120g Amber Malt

Hops:
EKG 5.6% 43g 60min (left-overs)
EKG 4.6% 28g 60min
Fuggles 3.9% 16g 15min
EKG 14g Aroma
IBUs: 40 (Tinseth)

Yeast: S-04 @ 20C

The Aromatic and Munich are maybe not items I'd normally put in a best bitter - the aromatic is a recommendation from the Jamil show recipe for Best Bitter.

OG: 1046 ish for 23L in fermenter.

First outing for an immersion chiller I've just built from 8mm copper - though I think I'm gonna have to look at the hop strainer again, as currently it runs across the middle of the boiler, rather than round the edge (this will be more of an issue later as I want to try adding a pump to re-circ and whirlpool the wort while cooling - it's pointless trying it with it draining from the middle!)

250g crystal malt
50g roast barley

40g fuggles 90mins
30g goldings 90mins
15g goldings last 15 mins
whitelabs english yeast
og 1050 75% efficiency
fermenting away nicely but sorry no pics.

Mine is coming to last 10 mins of the boil now, so thought i`d quickly nip on and post.

Heres what i`m brewing

3500g MO Pale
280g Crystal
18g Target @ 60 mins AA 10.6%
25g Boadicea @ 60 mins AA 5.6%
15g EKG once its cooled to 80 deg C

Not sure wether to go with Nottingham or S0-4 as they are all i have.

I was going to do something different but i`d used up all my fuggles and forgot to cross it off my stock list,
and didn`t have time to nip on to Pauls to get any :( , so i`ve adapted.
I didn`t go for the Roasted Barley in the end as i dont like the taste it gives.

All done and dusted now, i went with Nottingham yeast.

Target was 23ltrs @ OG1037
BU:GU Ratio 0.93 IBU`s 34.52

Not as strong as Jim would like but went for similar IBU`s.

Forgot to add
Actual was 25ltrs @ SG1036 so not too bad.

18g Northdowns - 30 mins
32g Fuggles (5.4% AA) - 15 mins

Safale 04

Had to bottle my 70/- last night to free up the FV for today! My other FV is being used as a grain store at the moment.

3800g Pale Malt
250g Crystal Malt
200g Flaked Barley
75g Roasted Barley
30g Chocolate Malt

40g Fuggles 90 mins.
10g Fuggles 0 mins.

23 litres.

Half teaspoon gypsum, 68C mash, pH 5.2, S04 yeast.

Lost 3 litres of first runnings (1058) due to open tap so the OG was lower than expected at 1041. Scaled back the hops accordingly to 23 IBUs.

Started 5pm and finished midnight.
Without patience, life becomes difficult and the sooner it's finished, the better.

Right....that's my JBK Anniversary Beer put away....

I'm going to call it Jim's Dark Horse Bitter ('cos it's bloody dark)

Should turn out to be a nice Extra Special Bitter

The WLP037 yeast never did anything, so sadly it's back to good old SO4. Should still be a nice beer, but I wanted the Yorkshire yeast to make it proper Northern like Jim. I did the whole brew in a Northern accent too.

Grain:
91% Maris Otter (5.3Kg)
6% 120EBC Crystal (350g)
1.5% Carafa III (90g).....I didn't want to open a new bag of Roast Barley, and i had the Carafa already open
1.5% Chocolate Malt (90g)

Hops were Fuggles and Target:
60g Fuggles 4.8% AA First Wort
40g East Kent Goldings 4.6% AA 15 mins
30g Fuggles 15 mins
20g EKG 1 min
10g Fuggles 1 min

Lots of pictures:

Image
Grain weighed out and ready to go

Image
All mashed in and nowhere to go. Actually that's not true, we ended up taking the dog for a walk so it turned into a two and a half hour mash. Mash temp started at 66.3C and was down to 63.6 at the end.

Image
First Wort Hops

Image
And the first runnings. Tasted lovely.

Image
More first runnings

Image
Boiling nicely

Image
Some more hops

Image
And the last of the hops....

Image
I thought I'd upgrade my brewery today! I substituted the short steps for the little wooden chair, and bent a piece of copper for recirulated chilling

Image
Running off

Image
Lots of hops = lots of gunk left over.....

Image
Pitched and aerated

Image
I ended up with 24L

Image
At 1.054. That should end up about 5.6% ABV or so, so it's going to be a good strength, dark traditional ESB type thing....

Well, that's it. All went well apart from the liquid yeast.

Do you think you put enough hops in that adm?? :) ;)
Looks good, I guess the yeast never bothered to start then??

Hehehehe.....it's only 40 IBU or so..... but I could probably have squeezed some more hops in if I had tried a bit harder. I only had 100g of Fuggles though (but about another kilo of EKG in the fridge!)

As for the WLP037, nope - it never did anything. It was still at 1.030 this morning, no bubbles, nothing.

It must have got overheated in transit or something. I'll call H&G tomorrow and see if they'll send me another one.
