London Porter

With Thanksgiving coming up, I need to brew a cask ale for the engine. I love Thanksgiving because it's a time to celebrate the brave pioneers that left the evil clutches of England, to bring peace and religious harmony to the land I live in today.

Last year I brewed a Landlord Clone that was killer. This year it's London Porter time. I have made variations of this recipe and it's excellent.
This recipe is assuming 70% mash efficiency.

London Porter

8lbs Bairds Maris Otter
1lb. Crystal Malt 60L
.6lb Brown Malt
.6lb Chocolate
.5lb Wheat
1 cup Blackstrap Molasses
1 stick of brewers licorice
Yeast: The dreaded Safale-04(makes good dark ales though)
S.G. Somewhere around 1.055

I'm going to dilute my water with distilled water to break up the alkalinity and sulfates. I'll add calcium chloride and sea salt to bring the calcium and sodium levels up.

I think the beer will be good. I am a fan of black treacle (molasses to you!) in ales. It imparts a lovely deep treacle aftertaste.

Here's my recipe for Landlord:

8lbs Golden Promise
1oz. fuggles @ 60
1oz. Styrians @ 60
1oz. East Kent Goldings @ 10
1oz. Styrians steeped while wort is being chilled
Yeast: Wyeast 1469
