A fast finisher

Well after almosy a month in bottles the brew named Northern Mystery is going to meet its maker ( down the loo) I have no idea what went wrong, the harsh bitterness s still there, and it is showing no signs of clearing at all so it is time to call it a bad job.

the pluss side is that i have around a 15-25 liter empty capacity!!:banana:

The bad news is i will not be able to brew until the end of the month at the earliest and i would ike something that is drinkable by the end of december.

I guess this means that i need something that is of a relative low OG .

I have the following grains available

Pale ( 14 kg)
dark crystal ( 1 kg)
light crystal (1 kg)
Torri wheat (1 kg)
black patent 500g
chocolate 500g

I have the following hps.

Goldings
styrian goldings
bobek
Northdown
challenger
fuggles
target


I will opt for either safeale 4 which i know and trust or the slurry of nottingham that has just finished fermenting a beer.

I have just made a batch of a play on the styrian stunner although i used bobek as well. this is a single malt brew and i would like something that gives another option.

Right now my christmas stocks are a full bodied hefty winter warmer at 7.1% ( 10 litres)
a styrian stunner type at about 4.8% ( 12 liters)
Oatmeal stout about 4.2% ( 5 litres)

I would like a 10-15 litre brewlength of something that is around the 3,7-8 mark that will be ready as fast as possible ( like within 3 weeks)

IS this doable and what would you suggest.

How about my Sett Bitter:

Brew length 12 litres
OG 1.040
FG 1.010
ABV 3.8%
EBC 17

Pale Malt 2000g
Crystal Malt 130g

Hops:

Fuggles 32g @ 60 minutes

Yeast to taste but works well with S-04

My vanilla and treacle ale was ready and tasty within 3 weeks of starting it.

It depends whether this kind of thing is up your street or not. It's not particularly vanilla-y, but has a pleasant fresh aftertaste.

WOuld it be ready in such a short time?

What IBu would i be looking at. ? The fuggles i have are 4.11% aa

IBU = 33. Beer Engine uses an AA of 4.9% so you'll need more. OTOH I have no idea what AA my fuggles are but the beer tastes good so I'm not too worried.
