Guinness Clone Head Retention
Guinness Clone Head Retention
Hi,
I'm looking for some advice, as I'm about to purchase the ingredients for my first ever Guinness clone.
Recipe I have so far for 23 litres is:
4000g Pale Malt
500g Flaked Barley
250g Roasted Barley
60g East Kent Goldings
I'm not sure however that I'm going to get head retention to the level that best suits a Guinness clone. I've read about torrified wheat as a head retention aid, and was wondering what other peoples experience with it was?
I'm happy also to hear thoughts on the recipe? (Haven't picked a yeast yet).
Thanks for reading!

Re: Guinness Clone Head Retention
The flaked barley is the ingredient in guinness which is usually relied on for the head. You may also consider using bullion hops instead of goldings.

Re: Guinness Clone Head Retention
Just read it again,Pat. You may also like to check your grain ratio. The nomal recipe is 70% pale malt, 20% flaked barled and 10% roasted. Nothing wrong with yours if you want a slightly "lighter" brew.

Re: Guinness Clone Head Retention
I have to admit, it looked similar to my light ale recipe I was very surprised. Thanks for the info!
I've tuned the grains to
3500g Pale Malt
1000g Flaked Barley
500g Roasted Barley
Makes for very easy purchasing too as the shop I use tends to do 3000g and 500g bags.
I'll save you a bottle!

Re: Guinness Clone Head Retention
Doubt you'll get hold of Bullion hops though - I'd maybe go for Northern Brewer (perhaps Magnum? Northdown is supposed to be good in a stout also). For yeast I'd maybe go for Nottingham as it should be fairly dry.
Re: Guinness Clone Head Retention
Yeah thanks, I couldn't find Bullion hops. I've got some Northdown hops tucked away so will use them.
Dammit though, I didn't think about Yeast. All I have is my Muntons Gold dried yeast.
I'm 25 batches in and still making errors like that!
Ingredients due in either today or tomorrow! If they get here today, the wife is out tonight so I'll be mashing! Bit late for Christmas which is a shame.

If that's what you have, then I'd brew with it! If it's a choice between beer or no beer...Evoflash wrote:All I have is my Muntons Gold dried yeast.

Re: Guinness Clone Head Retention
IMO Munton's Gold will be fine. After all, it's going to taste predominantly of roast barley anyway.
