Whilst on my travels i picked up 3k of Chocolate malt thinking it would do me for quite a while, small amounts in brews etc, however once at home i realised that the best by date was only a couple of months hence, so i just wondered if any members have a recipe or two that calls for lots of chocolate malt rather than waste it ? I have a number of different hops but wouldn't be averse to buying more if i didnt have what the recipe required many thanks all.

Re: Chocolate
Best I can think of is doing a big stout which you could squeeze about 15% Choc Malt into at 6+% ABV or higher. So over a 5 gallon brew you could use 1 kg.
I wouldn't worry about the BB4 date, I assume you have kept the bag sealed and stored well, don't rush to use it up

A good while, I've used chocolate malt that was a year past the best before date and it was fine.pas8280 wrote:Thanks pdtnc stout is the way to go i think, and im going to do a Taddy Porter which uses quite a bit along with Old Pec might lay a stout down for next winter i have the bag in a sealed plastic tub so it is air tight how long would you think i can use it for ?
I do like using chocolate a lot in my darker beers, 500gms to 1kg at times. Sometimes mixed with crystal or amber or just on it's own. Never had a bad beer yet from it. My gravities are usually around the 5% mark and I use a fair amount of hops say 100gms 4.5-5% AA for a 23 ltr batch.

Re: Chocolate
Best by dates are fairly arbritary; malt is not smart enough to know it should go bad on a certain date.
Any company that puts a best by date is covering their arses and the date will be well beore the product will actually go bad.
I use a vacuum sealer on all my ingredients and have kept grains and hops for long periods of time and they stayed good.

I'm just here for the beer.

+1, and as its chocolate malt its doesn't even have any enzymes to die off in the first place.
