I've only ever put the probe in the wort, but heard that other methods could have potential for inaccurate reading. If it was me I'd have wanted to know, that's why I posted.

Further to this different yeasts like different temp ranges and can produce undesirable flavours above them / not work or work slowly beneath them. Food for thought

I am begining to see that putting the probe into the wort must be the way to go. Looks like it will be worth the extra effort to clean and sterilise the probe. One other thing I have just checked the tc-10 instructions and found that you can calibrate it, which I have done using the glass thermometer and also a digital one as an extra check.

Since I did a hobgoblin clone on tuesday I have been plotting my next brew, and come this afternoon i couldn't wait any longer. I'm now about half way through doing a TTL from Graham Wheelers book. :D

Got the bug now!

remember the fermentation process is exothermic. the fermenting beer is usually warmer than ambiant temp especially in the first day or so when fermentation is vigorous.

Thank for that chard. To add to that point, do you think that it's worth running the temp' a degree or so cooler for the first day or two?
