just a quick update on the tc i made a while back. i drank some last week.
it was my first tc and i wanted to just do the basic version of apple juice sugar some strong tea and bread yeast.
i hoped it would be drinkable but didn't have great expectations for it. actually after a couple of months maturing (i forgot all about it cos i started ag brewing) its pretty damn good. the flavour is nice and its very dry which is also how i like it. i don't like commercial ciders cos they are all too sweet. i also tried drinking it with a cm of robinsons apple and blackcurrant cordial in the bottom of the pint glass which adds a touch of sweetness and a nice hint of flavours and some depth too. i think i will definately do this cheap and cheerful recipe again only i may try a different yeast as the bread yeast doesn't stick to the bottom when pouring.

I used wine yeast with included nutrients (guessing it was white but it didn't say) It's conditioning now but from the fv it tasted really good already :) Just as easy as kit beers except I'm not keen on the extract twang you get from them and was really not impressed with them but this turbo cheap cider is impressive (for the speed/price you really don't expect it to taste nice)

Can't wait for a hot summers day and some ice for these :)

Made my apple and damson jam TC 3 weeks ago and left in the demijon at my parents'. I had a few halfs topped up with lemonade on saturday night and it was rather tasty! I racked into a new demijon yestreday and topped up with a litre of apple juice. Should be rather amazing in the coming weeks.

I made up a batch of apple and pear TC, 4 pears diced and boiled in a litre of apple juice for about 20 mins, cup of strong tea, dash of yeast nutrient and it got down to 1.000. I bottled half in it's currrent state and half I primed with apple juice. It's clearing nicely in the bottles. Will let it condition for a good 4 weeks before I crack one open I think.

Got a batch of apple and blackcurrant on the go too, lidl apple juice and lidl blackcurrant jam. It looks and smells rather tasty I must admit!

Hi all

I am starting home brewing again after several years.

This is my TC recipe:

4 litres Tesco apple juice
Sainsburys bread yeast (one sachet)

Put the apple juice in a demijohn and add the yeast and shake for 2 minutes.
Add airlock and let ferment.

The first batch of this fermented out in just 2 days. i thought the fermentation had stopped prematurely but when i tested it with a hydrometer it was reading 1.000.

I bottled it with one tsp of sugar in each bottle and left it for 2 weeks.

The taste? Pretty damn good for a cheapy cider. i think the bread yeast makes for a sweeter brew.

My next one i will add more sugar and a cup of strong tea and note the difference if any.

hi

i'm gonna get 2 batches on the go today along with some ribena wine. 1 of the tc's will be standard and the other will have a jar of jam in it.

my question to those who have used jam or honey is ... do i just dissolve it in some warm juice before adding to demijohn or is it necessary to bring it to the boil???

i just disolved it in warm aj as there were no presevetives.?.? In the jam....if there are you will probably need to boil it up!

err i just looked at the jam label apart from the sugar citric acid and pectin it says it contains an acidity regulator: sodium citrates. is this something that needs to be boiled off? i've already made the cider and its fermenting away....i brought it to the boil and simmered for 3-4 mins will this be ok or is there a risk to drinking it??

No sorbates or sulphites so you should be good to go, acidity regulator is just a buffer to keep the pH in an acid range that will discourage bacterial growth.

Just tried my first ever go at TC and all I can say is WOW! Seriously didn't think it'd be that nice from something so quick,easy and cheap and the bitterness/sweetness is just how I like it :D Will now have to make a lot more so I don't go short during the summer.

Okay so this thread is generally about recipes but there is the word 'techniques' in the title, so see what you think of this.

I call this hyper-turbo cider and I would recommend it to anyone who wants cheap booze but cannot be bothered to sanitize or syphon. Out here in Canada, you can get apple juice in 1.82L PET bottles. Get a few of these bottles and a packet of bread yeast or champagne yeast. Pour out some apple juice, sprinkle some yeast into each of the bottles and screw the lid on loosely. When it stops fizzing, tighten the lid and release gas twice a day, until the bottle stops getting tight. Pour in a table spoon of sugar, tighten the lid, leave for a week and wait until it clears. It might take a while with bread yeast but it will eventually clear and tastes absolutely fine. It's a bit ghetto, but turns out a very respectable cider.

This method was developed from the pop bottle brewery method which I developed with a friend, whereby the brewer harvests a number of 2L pop bottles and takes whatever and ferments it and dispenses from the same vessel. I have the demijohns, buckets, carboys, stock pots and all that jazz. However, I occasionally ferment something weird in a pop bottle like a prune juice apple juice mix. My neighbour is even fermenting a beer kit this way. The fermented fruit juice works fine using this technique when compared to my two stage fermentation process - demijohn, perrier bottles. However, I'll have to wait another week or two for my neighbour's beer kit to condition before I can comment on that.

I've got about 4 on the go at the moment. I cracked a bottle open the other night that I bottled off a few weeks back without racking and it was pretty decent, primed with apple juice and served nice and cold - slipped down well.

Got an apple and raspberry jam cider on the go at the moment, needs to be racked and cleared. Also bottled my apple and blackcurrant after racking and clearing etc and it looks nice and clear :)

A head's up for those TC fans, not sure if this is the one you use but it is 59p for 1.5L at Lidl currently.

Just took advantage of that offer and lugged 14 cartons back from my local Lidl in a large suitcase! Made up a recipe along the lines of Dreadskin's on the first page of this thread. OG 1.063! Might have to top it up with some water.

Right, I'm on my 5th TC atm. I always use Jam dissolved into a litre of apple juice along with 5l of apple juice and a cup of strong tea.

How can I give it that bit extra flavour? My apple and blackcurrant TC doesn't taste of the jam i fermented it with.

Would it be worth fermenting out 4l of apple juice, racking it into a new Dumijon and adding the remaining 1l of apple juice with my jam disolved in?

I do like the flavour, rather dry and a decent kick but would love a little less bitter flavour.
