White Star IPA
Re: White Star IPA
This is looking seriously wonderful Pants!
I echo Jubby's thoughts on the DTE.
And I see that you will be doing a full recirculating cool soon!!
As far as that graph of Bellebouche goes......
Virtually all of my beers fall in the Extra Hoppy or are off the right of the scale by a long way.
It might be that I always FWH, although I did not know I was doing it until about xmas!
Todays was an IPA with Pacific Gem, Cascade and a lot of Amarillo, 1.075 and 88 IBU.
So where does my "Serious IPA" fit in at 1.085 and 235 IBU??
Jubby will know of course, it is very similar to his "Outrageous" but using WGV instead of EKG!

Re: White Star IPA
Guys, i think we need to start a Hophead IPA club. Bikers jackets with our own colours! Befuggled 'The serious IPA' fits into a cupboard till next year. i know my bottle of it is! The chart is interesting in that it shows how much the style has degenerated over the years. That is assuming its an IPA chart and not just a general beer ratio chart? I've not tried Pacific Gem but i like the name. What's it like?
Had a good clean up today and back to default

Honking wafts of citrus, tropical fruits and toffee when i opened the FV. I will need to get some more stainless weights as the oak chips have floated both bags and 2 1" bsp stainless fittings! I think i will be adding another bag with some more whiskey barrel chips as the smell off of them is outrageous and this is a full year and a bit waiting beer(no honest most of it will survive an anniversary). I didn'y get the chance to grow my two small samples of whiteshield IPA yeast before brewing but they both went into the FV as they came out the bottle. i have no idea whatsoever if they will grow or not or if the US05 will dominate completely? Doesn't matter too much at least they're getting the chance.

My brewery mascot who watches over all my shenanigans

Some Scottish brewers may recognise this?

Befuggled, i can see another IPA swap coming up or i'll be blasting down to Englandshire in the motor! I know the default state for a Porsche owner is 'wan*er', honest i'm not i've been waiting 23 years to buy this and i'm still excited as i've only had it a month, honest i even let little old ladies cross the road and everything.
Never even think about the 50 point potential in each one......

For those of you who have done a Whisky distillery tour and can remember the smell in the full barrel storage rooms and like it, AND might like to have some of that in their beer. Here's a link. Can't promise that 20 minutes at 200 C in an oven will kill everything but i'll let you know and the smell of the chips make the risks worthwhile! I've used the french oak chips from brupaks before and they were fine but compared to these bad boys they were lacking a bit in smell(assume from wine barrels). Price/volume ratio here can't be beat either. Sorry BelleBouche but at least i DO still like a choc au pain in the morning!

Re: White Star IPA
Well Pants, there are only five bottles of the "Serious" - and Rob has got one coz ov thu ops!
The rest is in a corny glowering at me
I will be bottling more in the future now I have sussed the carbonation (I think!)
Rob is threatening to put the Columbus recipe I did earlier this year onto his website
That was off the scale again at 1.072 and 84 IBU.
I'm sure I more or less lifted the recipe from here, but I can't remember who's it was! I will have another look so that I can proper respects.
Anyway, Nelly's IPA, M'Dear IPA, Doolally IPA and Arapaho IPA are in the FVs (I've gone to American Indian Tribes for the ones with mainly US hops, stick with British Army Slang for the more traditional IPAs
).
Planning somethings like Mysterio's recent IPA (Blackfoot), a Chimera rip-off (Dhobey) and possibly Scooby/Scarer Jaipur(Cherokee).
And I have promised to do a Heffalump IPA
Would that funny little motor get this far?
The rest is in a corny glowering at me

Have you read Bury my heart at wounded Knee? Wow is all i can say for that book.
Bought the beetle in Exeter and drove it up the road in a single run only stopping for fuel breaks and a single Jimmy at the border, so no chance it would get there in 1 bit! Without a doubt THE safest most planted motor i have ever driven. That's with No ABS, traction control, power steering, They built proper cars in the 80's!
What volume are you looking to carb to?
Re: White Star IPA
NO, NO, NO, NO, No way, never, not yet.......
I have not read "Bury my heart....." and I am NOT going to put it on top of the other 17 "read pile" books which have resulted from your perverse "shower" thread. Complete with 4x Matthew Reilly now....
And yes, I have got an IPA obsession; I have had it for many decades before I found Jim's. (memo to self: need some Alcazar soon).
Sitting here drinking a very pleasant Challenger and eating cold Lamb and Pork left over from Adm's evil Barbecue/Smoking thread and trying to get some paperwork done.....
What you need is a nice Series 1 landy!
I have just seen the carb vol bit - I dunno, 2.5 gms/litre seems to be working quite well

Re: White Star IPA
Cold lamb and pork, bring on the chutney! I make my own. The Tree is looking good this year. I'll send you down a jar. 'Is sir sure i can't tempt him with one more waffer theen book'?
I'm playing about with the label for this beer. Want to keep it happy even though the ending was bad for the shipping line. What do you guys think?

Series one SWB pick up with 3.5 ltr engine, very nice.

That's a bummerpantsmachine wrote:Got the phonecall this morning. Away offshore tomorrow morning to play in the Baltic via a mobilisation in Norway. Guess this beer will get a longer dry hopping and oaking than i initially planned! Expect to be away for 3 to 4 weeks. I dumped a 1/4 ltr out the bottom of the FV this morning and very little trub to be seen. Filtering back through the hop bed has made a big difference. I'll dump the same before i leave the house tomorrow and that will be that!

I don't think you can have too much Amarillo or Simco though, I'm sure the 4 week dry hop will be good. Never used the oak chips though, perhaps i should give it a go sometime.

Re: White Star IPA
Last handy hint related to Ebay. I know we all have our own ways of doing labels but thought this guy was worth a mention. I have no idea where he got the pack of labels from and as long as i'm not his office manager i don't care!
http://cgi.ebay.co.uk/ws/eBayISAPI.dll? ... 0618457536
It is a lot of labels but they are only 0.775p each which is rather good. He's sold before for £20 and he ended the auction today as i asked him to coz my company bans ebay offshore so i couldn't have paid for them. Jubby and Befuggled have seen the labels.
EDIT. Side slipped Norway tomorrow, off to Baku on Monday instead!

Re: White Star IPA
Sounds like it's a good idea that you are away during June Jubby, there might be some left for July!
Well, what does it taste like then? March sounds like it's going to be a good month
Bit of a buga Pants, but you have got to earn enough to cover the massive costs of the hops!
That label deal looks a good one, but I have quite a few to use up now! - and I don't normally bother to label the "inhouse stock"!
Afterall, you only have to take the bugas off again!
You put a big grin after Baku - is that a good move then? or was it just missing out Norway?
Looks like an interesting city from a quick look on t'interweb. More importantly, what's the beer like?

Re: White Star IPA
Its not how good Baku is(although i've heard its a good run ashore if the opportunity arises) its how it doesn't have the chemical weapons and as much potential radioactive waste as the Baltic Sea job! Not to mention the suffocant and phosphorous shells littering the seabed.befuggled wrote:Sounds like it's a good idea that you are away during June Jubby, there might be some left for July!

Think i've done a fair job of setting fire to the bridge that connects me to my current employer by slipping the Baltic job. Just goes to show, 10 years go anywhere, do anything, the moment i put my family first(holiday booked and no transport off the vessel in Baltic to get me home they act as i've stabbed them and tell me this has been noted)! Hey ho there's always another employer coming along if push comes to shove! This might be just the push i need to jack and go full selfemployed dayrating.
Sorry about the whinge but the f**kers hacked me off today, sneaky pr**ks tried to get me there kidding on there'd be a crew change when i knew there wouldn't.

Re: White Star IPA
Hope it all turns out ok Pants,
It sounds like you have been peed off for a while
It must be really good to have the experience and skills to be able to job-hop in the current climate!
When I started my business in 1989 it was a bit of a jump but made much easier not having any kids.
It's not quite the same for you, and you will have the dreaded IR35
It's certainly pretty good knowing that the only aarsehole pushing you about is the one you are sitting on!
Good Luck!
