Post by WishboneBrewery » Fri Oct 01, 2010 8:12 pm

How's this for a darkish Mild???

Mild Ale

Fermentable Colour lb: oz Grams Ratio
Pale Malt 5 EBC 6 lbs. 7.8 oz 2940 grams 75%
Caramalt 20 EBC 1 lbs. 4.7 oz 585 grams 15%
Chocolate Wheat Malt 820 EBC 0 lbs. 6.9 oz 195 grams 5%
Flaked Oats 0 EBC 0 lbs. 6.9 oz 195 grams 5%

Hop Variety Type Alpha Time lb: oz grams Ratio
Golding Whole 5.7 % 60 mins 0 lbs. 0.5 oz 15 grams 37.5%
Fuggle Whole 4.9 % 60 mins 0 lbs. 0.5 oz 15 grams 37.5%
Golding Whole 5.7 % 10 mins 0 lbs. 0.4 oz 10 grams 25%

Final Volume: 23 Litres
Original Gravity: 1.039
Final Gravity: 1.011
Alcohol Content: 3.6% ABV
Total Liquor: 32.2 Litres
Mash Liquor: 9.8 Litres
Mash Efficiency: 80 %
Bitterness: 20 EBU
Colour: 65 EBC

Probably Mash high at 69c, possibly use a couple of packs of Windsor yeast that have been in the fridge for a while... this could possibly be one of the simplest recipes I've ever made!!!

Pretty close to my mild recipe except I use all goldings hops.
I've used several different yeasts, but not the nottingam. The last time I brewed it I used safale-04 with good results.
I'm just here for the beer.

I've pitched Notts... though I nearly went through with the Windsor!
Maybe I'll give it a chance on the next brew.

Windsor works quite well as a yeast for some wheat beers!!!

That looks pretty delicious. Let us know how it turns out. I haven't ever used chocolate wheat let alone thought of it for a mild.

This sounds really good. Must put a Mild on my list of things to brew.

This is the time of year for a nice Mild!

Mild Malt and also Munich Malt are really nice substitutes for Pale in a brew such as this.

I recall brewing a lovely smooth one a few years back with 20% each of Mild & Munich. I'd be happy to let them take a bit more percentage of Pale. Brown Malt is always a good addition for the colour as its less harsh than choc.

I used some Mild Ale Malt in my last Stout, though i don't think it added much. I'll have to try a larger proportion of it sometime.
