Thought it might be an idea to re-post a cleaned up brewday thread to make it easier to follow (if anyone was trying?..)

The recipe I settled on was as follows not because I have a clear understanding of how to build a solid recipe but because I love hoppy ales and have a freezer full of fuggles at the moment:

This wasn't the original recipe but some inaccuracies in AG#1 left my grain stock all over the place.

Due to a late night on saturday I seemed to spend alot of time faffing and pottering around so didn't get the HLT fired up till 11am!

Hit mash spot on at 65.5ºc and lost 0.1ºc over the 90min:

I cant seem to get the run off clear on any way shape or form but its been suggested that it may be the wheat thats causing that so AG#3 will be wheat free to find out if thats true or if its a floor in my method..

I adjusted my evaporation losses and seem to have hit my collected volume and target SG perfectly (sorry forgot to take a pic of that.).

Cooled to 23ºc and pitched S04 starter made as per jim's guide (linked in the top right of this page). 24 hours later and BOOM:

Had to laugh. As I opened the lid to check on proceedings, my 2 year old son ran into the kitchen looked in the FV and shouted "Mmmmmm beer daddy!".

A little recipe critique...
A blend of the Fuggles & Styrians @ 60 or 90mins would have been better in my opinion rather than hops at 60&90. :)

Thanks for the advice, Im a novice at this but with some practice Im sure ill be fine!.. :lol:

I noticed a pack of yeast missing a while back, only to find the 4yr old and the 7yr old "brewing" out the back of the shed, yeast pitched and all :)

This stuff is smelling amazing! I cant wait to have a sample! Noticed a huge amount of trub through the side of the FV this evening!:

Hey Dave. Quite a bit of wheat there which probably explains the haze. However, I've used more than this in the past and have ended up with clear beer. Do you recirculate with a pump? I sometimes do this for an hour straight (sometimes more) if I'm working with hazey malts. Gelatine seems to do the trick too but I've read it only drops yeast particles out. However, I've had unclear wort go into the fermenter and clear after gelatine was introduced in secondary...

To make it even more hoppy, next time, forget the 15 min addition and chuck them in shortly after chilling when the wort is 85c. Turn off chiller and leave for 30 mins stirring gently every every 5 mins or so. You'll really get the flavours coming through, especially with the Styrians. Have never tried this with Fuggles before but plan to do just that this week hopefully.

Also, 90 min and 60 min additions will do the same thing.

Thanks for the advice. I'll get some gelatin at the weekend. Is it better to stick to brupaks gelatin or just any old stuff from the supermarket?

dave, looking at the amount of hop debris on the yeast head i guess you used pellets?

I might be tempted to skim this but this is just my opinion. Hope this one warks out.

Best you tweak the recipe now and practice with another hop mix... for scientific and "understanding the process" reasons of course ;)

Yeah, the fuggles were of the pelleted variety. So skim the foamy head and crud from the fermenter?

What makes it scary is that I'd removed almost all the head and crap from the top of the FV before I took the reading and by the time I'd taken the reading and got my phone out to record the SG the wort had covered in fermenting bubbles again!!

Wanged it over into secondary... oh, and Ive deffo found my missing cold break trub!...
