AG#5 Centennial Pale Ale

Hi all...

Been one of those afternoons where I think about beer recipes...

I'm fancying making a Pale Ale (assuming my next two clones turn out ok-they are getting progressivley pale) with plenty of hops and a nice clean crisp flavour...

I'm thinking something along these lines - your comments please gentlemen:

OG:1052 FG:1012 ABV 5.1%
Efficency :75%
IBU 52

Pale/Lager Malt 5000g
Crystal (120l) 300g

Hops:
Centeninal (AA11.7%) 20g @90mins
Centeninal (AA11.7%) 44g @10mins
Centeninal (AA11.7%) 34g @5mins

Yeast Safeale US-05

Single step infusion @ 66C
Ferment at 18-20C

I'm watching this............just bought some centennial, but never used them before so don't know what to expect :?

I have heard/been told they are similar to cascade & amirillo - citrusy/floral but nice high alpha and not harsh...

So I bought some and I'll give 'em a whirl...

Yes that's what I was told when I was buying 5 or 6 others of the cascade amarillo type.................I was persuaded to try them on that basis ...........we could end up doing sister brews!

Looks like a nice recipe. I'd dry hop too, if you have the hops.

Centennial have a more intense aroma than Cascade, IME, but similar bittering qualities. I like them blended with Amarillo for a big citrus punch.

Yeah can't go wrong with Centennial. Similar to Cascade.

I made a pale ale using 100% cascade early summer time and it was lovely.

I'll be doing the Sierra Nevada Celebration Ale soon and this includes lots of centennial and cascade (65 IBU).

A brewer friend who makes an absolute cracker of a Cenntenial has made (in my opinion) some of his best ones with 100% Pale or with only a touch of crystal... I might go a bit less (sub-5%)...

Definitely find a way to get a 1 min addition and (or) steep addition. Cenntenial has a lovely aroma that will be more muted with 10/5 additions.

Thanks for your comments!

I will have a play around later and reduce the crystal to 4% and move the hop schedule around to get a 0/1 min addition in without changing the IBU's... I'm thinking adding a few grams at the 90 min and moving the 5min to a 0min additon should do it.. But I'll have a better I dea onceI run it through Beer Engine

Here is a revised recipe (albiet not yet run thru' BE)

OG:1052 FG:1012 ABV 5.1%

Crystal (120l) 200g 6%

Hops:
Centeninal (AA11.7%) 22g @90mins
Centeninal (AA11.7%) 44g @10mins
Centeninal (AA11.7%) 34g @0mins

Cascade (AA6%) 20g dry hop in secondary (for approx. 5-7 days)

Yeast Safeale US-05

Single step infusion @ 66C
Ferment at 18-20C in Primary for 7-10 days


How does that look...?

+1 I am not a huge fan of Cascade as a dry hop whereas Cenntenial is an awesome dry hop. Plus going all Cenntenial would give you a better sense of its essence.

I would buy an extra pack of Centennial and go 50 at flameout with another 50 in as a dry hop addition... But I am a hop-monster 8)

Hi, Ok...

I'll stick with the Centennial for this and re hash the hoping - I thought I could go with
25g @90 mins (35 IBU)
50g @10 mins (24IBU)
15g at 1min/0min
and 10g for dry hops

I do have another pack of Centennial but I have plans for these in another beer...

However I could use that pack and buy more from Rob at a later date...
In which case I'd go with:
25g @90 mins (35 IBU)
50g @10 mins (24IBU)
25g at 0min
and 25g for dry hops
